Good Eats...

Here is the perfect after school snack...

Mix together 1 cup peanut butter and 1 cup honey until smooth. Gradually add in 3 cups old-fashioned oats and 1/2 cup ground flaxseed. Add 1 cup choc. chips and 1 cup any combination of soft dried fruit and nuts. We used 1/2 cup of crasins with 1/2 cup peanuts. Mix this together by hand or in a stand mixer. Roll into ping-pong sized balls and place in mini paper muffin cups. Place in fridge over night and enjoy! They freeze well too. Layer on wax paper and store in airtight container.
